How to Use Arizona Rub
Which Rub Blend Should I Use?

Bacon Pork Kabobs

These meaty, root beer marinated and glazed kabobs are not only fun but deliver on great flavor.

1½ - 2 lbs Boneless country-style pork loin ribs       
2 Liters Root beer, your favorite brand
6 Strips  Smoked bacon, thick sliced     
1 C Beef broth         
1 TSP Arizona Chipotle Rub         
2 TSP Worcestershire sauce
2 TBSP Brown sugar           
6 Wood corn skewers (soaked in water)

Cut pork ribs into chunks about 1 to 1½ inches square. Place in sealable container. Pour in enough root beer to completely cover the pork (Note: Be sure to reserve 1½ cups for later). Cover container tightly and allow pork to marinate for 4 hours. Remove pork from root beer marinade. Discard marinade. Create kabobs by first skewering the end of a bacon slice (just about 2" on to skewer) then follow with a piece of pork. Next wrap the bacon around one side of pork and skewer again. Repeat until you have skewered 4 pieces of pork and the entire slice of bacon. Grill over medium hot grill for about 6 to 8 minutes per side. Brush generously with root beer glaze (see below) and grill for about 2 to 3 minutes more on each side.  Remove from grill and brush again with glaze. Serve immediately.  

Root Beer Glaze
While pork is marinating, combine 1½ cups root beer, beef broth, Worcestershire sauce, brown sugar and Arizona Chipotle Rub in saucepan. Bring to boil then reduce to simmer. Continue simmering until the mixture has reduced to about 3/4 cup.
