Arizona Oven Baked Fries

These can quickly become a family favorite.

4 – 6 Yukon Gold potatoes
2 TBSP Olive oil
4 TBSP Fresh cilantro, chopped
3 Cloves Garlic, minced
2–3 TBSP Arizona Rub (your choice of blend)
2 Limes

Cut potatoes into fries using mandolin, fry slicer or knife. Place in boiling water for 5 minutes to lightly soften the outside of the fries. (Note: Do not overcook.) Drain and rinse with cold water. Place potatoes in bowl and drizzle with oil. Add Arizona Rub, 2 TBS cilantro and garlic. Toss well to coat evenly. Place fries on non-stick cookie sheet (or spray with non-stick product) and bake in preheated oven at 425 degrees for 20 to 30 minutes until lightly browned. (Note: Baking time will depend on thickness of the fries.) Be sure to turn two or three times to help prevent sticking and even out the crispness of the fries. Remove from oven and mix in remaining cilantro. Garnish with whole cilantro and slices of fresh lime.
