Bacon Wrapped Meatballs
These meaty morsels make a perfect hors d’oeuvre for just about any gathering of family and friends.
1 lb Lean ground beef
½ lb Ground pork
¼ C Red bell pepper, diced
1 Can Diced green chilies, 4 oz
3 Cloves Garlic, finely chopped
8 Slices smoked bacon, halved
½ C Grated Parmesan cheese
1/3 C Bread crumbs, plain
2 TBSP Arizona Chipotle Rub
1 TSP Mustard powder
2 TSP Worcestershire sauce
1 Egg, large, lightly beaten
½ TSP Mexican oregano, dried
¼C Fresh cilantro, chopped
Preheat oven to 350º F. In large bowl, combine all ingredients (except bacon). Mix well. Form into meatballs about 1½” in diameter (recipe should yield 15 to16 meatballs). Wrap each meatball with half strip of bacon and fasten with toothpick. Place on non-stick cookie sheet and bake until bacon is cooked, about 50 minutes. Remove from oven and let cool slightly then remove from cookie sheet with spatula. Serve warm drizzled with catsup or your favorite BBQ sauce on the side for dipping.
