BBQ Beef Tri-tip
One of the most flavorful cuts of meat to BBQ is the beef tri-tip roast. Tri-tips are a boneless cut of meat from the bottom sirloin. They are also called “triangular” roasts because of their shape. (Note: If your butcher doesn’t have tri-tips out, ask him to order some!)
Tri-tip roast (1½ – 2 lbs)
Arizona Rub (blend of your choice)
Coat tri-tip well with Arizona Rub blend of your choice. Cover with plastic wrap and allow to marinate at room temperature for two hours. You can marinate longer or even overnight in refrigerator, bringing back to room temperature before barbequing. Place on medium-hot barbeque, turning occasionally, and cook until internal temperature reaches 135° F for medium rare or 150° F for medium. Remove from grill, tent with foil and let rest for 10 minutes before carving into slices approximately ¼ inch thick (cut across the grain and at a diagonal). Serve sliced meat immediately. Note: Sliced tri-tip also makes great sandwiches!
