Chili Lime Chicken
Succulent, juicy and full of flavor, this chicken is excellent for any backyard BBQ. Be sure to invite lots of friends.
Cut up chicken parts (breasts, leg quarters, etc.), bone in,
skin on for most flavor
Arizona Chili Lime Rub
Vegetable oil
Lime wedges
Coat chicken liberally on all sides with Arizona Chili Lime Rub (chicken should be well covered with rub on all surfaces). Place in pan or glass baking dish and cover with plastic wrap. Allow to marinate in refrigerator for 3 hours or more.
Remove chicken from refrigerator and allow to return to room temperature for about 30 minutes before grilling. Grill over medium-hot covered grill until internal temperature reaches 165º turning about every 10 minutes. After each turning, brush with a little vegetable oil mixed with rub. Remove from grill and serve immediately with lime wedges.Note: We like this best grilled over chunk mesquite charcoal.
