Chili Lime Fish Bake
This light, flavorful and healthy dish is a simple yet elegant way to prepare fish that your family and friends will enjoy.
4 Cod fillets, 8 oz each (or fish of your choice)
2 Tomatoes, medium/large, sliced
¼ C Parmigiano Reggiano cheese, shredded
1 Tomato, medium/large, diced
¼ C Bread crumbs
¼ C Fresh cilantro, chopped
1 TBSP Arizona Chili Lime Rub
Extra virgin olive oil (good quality)Preheat oven to 350º. Place two slices of tomato in the bottom of each of four individual oven safe serving dishes. Drizzle with a little olive oil and lightly season with salt and freshly ground pepper. Generously season fish fillets with Chili Lime Rub. Place fish fillets on top of sliced tomatoes. Drizzle each fillet with a little olive oil. Cover each fillet with a layer of bread crumbs. Top with shredded Parmigiano Reggiano cheese. Top with diced tomatoes and chopped cilantro. Bake for 30 minutes. Remove from oven and allow to cool for a couple minutes. Serve.
