Cowboy Steak

Cowboys cooked over an open fire giving steaks a distinctive smoky flavor—just like these. So put your boots on and go get to grillin’.

 4 Rib-eye steaks, about 16 oz., USDA Choice or better       
Arizona Mesquite Rub

Liberally coat steaks on all sides with Arizona Mesquite Rub. Place in pan or glass baking dish and cover with plastic wrap. Allow to marinate in refrigerator for 2 to 3 hours. Remove steaks from refrigerator and allow them to return to room temperature for about 30 minutes before grilling. Grill over medium-hot covered grill until desired doneness (about 7 minutes per side for medium rare). For crisscrossed grill marks, rotate steaks 90º or so half way through cooking time on each side. Remove from grill and serve immediately while hot.Note: Keep your six gun handy to ward off thievin’ steak rustlers.
