Grilled Zucchini

This easy-to-make side dish complements whatever you’ve got on the grill and has a flavor everyone will love.

4 Zucchini, medium/large    
¼C Olive oil, extra virgin
2 TBSP Arizona Chili Lime Rub       
Parmesan cheese (optional)
Peel zucchini and cut lengthwise into ¼” thick slabs. (Note: Don’t slice too thin as zucchini loses moisture and becomes thinner when it cooks.) Lay out on cookie sheet and brush with a good quality, extra virgin olive oil. Sprinkle liberally with Arizona Chili Lime Rub. Turn zucchini slabs over and repeat. Grill over medium/high heat until lightly charred on both sides. Remove from grill. Sprinkle with a little Parmesan cheese if desired. Serve immediately.
