Orange Chipotle Glazed Chicken

This is a very nice summer barbeque recipe to serve friends and family.

4 Boneless skinless chicken breasts
2 TBSP Arizona Original Rub
12 oz orange juice concentrate, thawed
2 TBSP Arizona Chipotle Rub
2 TBSP Orange zest

One by one, place chicken breasts in large freezer bag and pound with kitchen mallet until about 1/2 inch thick. When all breasts are pounded, season with Arizona Original Rub. Set aside.

In small bowl, prepare glaze by mixing thawed orange juice concentrate, Arizona Chipotle Rub and orange zest. Set aside and mix a couple more times before using.

Place pounded chicken breasts on hot grill. Cook for about 2 to 3 minutes then turn being careful not to tear chicken apart. Brush well with prepared glaze. Cook 2-3 minutes more then turn and brush with glaze. Repeat two more times until chicken is done. Let chicken develop a little char (but don’t let it burn) to give it more barbequed flavor. Remove from grill and serve immediately with your favorite side dishes.
