Roasted Corn on the Cob
Corn on the cob is always a great complement to any BBQ but this recipe makes it especially good!
4 Ears of corn
½ Stick butter – melted
2-3 TBSP Arizona Chipotle Rub (or blend of your choice)
2–3 TBSP Cilantro, finely chopped
Combine butter, Arizona Rub and cilantro in bowl. Mix well. Brush marinade on each ear of corn taking care to coat thoroughly. Set remaining marinade aside. Wrap each ear in aluminum foil and place directly on BBQ grill. Turn constantly to cook evenly for approximately 20 to 25 minutes. To get that great caramelized flavor, corn should be somewhat browned with darker grill marks. Remove from grill and remove foil wrapping. If desired, brush with remaining marinade. Serve.
