Rubbed Crock Pot Chicken
So easy to make. So good to eat!
Chicken
1 Whole chicken (4 – 5 lbs)
1 Can Chicken broth (14 oz.)
Arizona Rub (your choice of blend)
Wash and pat dry chicken. Coat thoroughly with Arizona Rub (don’t forget inside the chicken) and place in crock pot. Add 1 can of chicken broth. Cook on low until meat starts to fall off bone (approximately 5 hours). Remove chicken from crock pot and debone. Strain crock pot juices. Put deboned chicken into strained juices and add additional Arizona Rub to taste. Let simmer in crock pot on low setting. Start rice (see below). When rice is done, spoon into bowl and add chicken over rice.
Rice
2 C White rice
4 C Chicken broth
Salt & Pepper
Bring chicken broth to boil, add rice and salt and pepper to taste. Reduce heat to low, cover and simmer until rice has absorbed all liquid and is light and fluffy (approx 20 minutes).
