Rubbed Red Potatoes

This is a quick and easy way to prepare great tasting potatoes that have more than a bit of pizzazz.

6 – 8 Red potatoes, quartered
½ Yellow onion, sliced
Arizona Rub
Olive oil

Wash potatoes and cut into quarters. In a bowl, lightly coat with olive oil and sprinkle with Arizona Rub. Place in shallow Pyrex baking dish and add sliced onions. (Note: You can also add other things like diced red and green bell peppers and green chilies for extra color and flavor.)

Cover with plastic wrap and poke a couple of small holes to release steam. Cook in microwave on high for 8 to 10 minutes. Let stand about 5 minutes. Remove plastic wrap and serve. (Note: Microwave time may vary depending on the power of your microwave.)
