Smoked Meatloaf

Take meatloaf from mundane to magnificent by giving it some great smoke flavor. After this, you’ll probably never eat it any other way.

1 lb Lean ground beef
1 lb Ground pork
1½C Onion, chopped
1 4oz Can Diced green chilies
8 oz Pepper Jack cheese, 3/8″ cubes
2 Eggs
½ Red bell pepper, diced
1C Arizona Rub Old Wrangler™ BBQ Sauce
½C Panko bread crumbs
2 Cloves garlic, finely diced
4 TBSP Arizona Original Rub
2 TBSP Arizona Chipotle Rub

Place one half cup BBQ sauce and all remaining ingredients in large bowl and mix well. Transfer mixture into bread pan or other suitable oven safe dish. Place meatloaf in smoker and smoke at 225° to 250° until internal temperature reaches 140°.  Top with remaining BBQ sauce and continue smoking until internal temperature reaches 170°.  Remove and allow to rest for about 10 minutes. Cut into slices and serve. Try Roasted Corn on the Cob and Southwest Mashed Potatoes as sides.
