Southwest Sausage Cups

Easy to make, crispy and great tasting, these could become a regular hors d’oeuvre at all your parties.

16 oz Pork sausage (we prefer Jimmy Dean®)     
24 Wonton wrappers
½ C Red bell pepper, diced           
¼ C Chopped black olives
1 C Sharp cheddar cheese, shredded      
¼ C Cilantro, finely chopped
1 TBSP Arizona Original Rub          
1 Lime, large, halved
½ TBSP Arizona Chipotle Rub

Preheat oven to 350°. In medium skillet, cook pork sausage until done. Add bell pepper, black olives, Arizona Original Rub and Arizona Chipotle Rub. Mix well and cook for 1-2 minutes. Add cilantro and juice from the both halves of the lime. Stir well and remove from heat. Lightly spray muffin pan(s) with cooking spray. Place a wonton wrapper in each cup and gently mold to each muffin cup. Place about 1 TBSP of sausage mixture in each wonton. Top each cup with cheddar cheese then bake for 10 minutes. Remove from oven. Place sausage cups on platter and serve while still warm.
