Spanizona Rice
If you’ve been looking for quick and easy Spanish rice recipe with an Arizona flair, this may be the one to end your search.
2 TBSP Vegetable shortening
1½ C Long grain rice
½ C Onion, finely chopped
½ C Diced tomatoes
¼ C Tomato sauce
2 Cans Chicken broth
¼ C Fresh cilantro, chopped
2 TBSP Arizona Original Rub
1 TBSP Arizona Chipotle Rub (optional)
Heat oil/shortening in large skillet on medium high. Add rice, stirring constantly until lightly browned. Add onion and Arizona Rub and sauté for about one minute. Stir in diced tomatoes and tomato sauce. Add chicken broth and bring to boil. Cover, reduce heat to low and let simmer for 20 to 30 minutes until rice is tender and broth has been absorbed. Stir in cilantro and serve with lime wedge.
