Sweet & Spicy Pecans
A heavenly blend of spicy Chipotle, sweet brown sugar and rich pecans that’s perfect for any gathering or occasion.
3 C Pecan halves
1 C Light brown sugar
3 TBSP Butter
¼C Cider vinegar
3 TBSP Arizona Chipotle Rub (If you prefer less spicy use 2 TBSP)
Preheat oven to 350 degrees. Measure out all ingredients and have ready when needed. Melt butter in a large non-stick skillet over medium-high heat. Sauté pecans for 3 minutes until lightly browned. Reduce heat to medium then add brown sugar and stir constantly until the sugar begins to caramelize (you will see the sugar liquefy around the pecans). Do not allow the sugar to burn. Sprinkle the Arizona Chipotle Rub evenly over the pecan mixture and mix well for about 30 seconds. Add the vinegar (this will create a lot of hot steam) and continue to cook, stirring constantly until all the vinegar has evaporated. Remove from heat. Working quickly, spread the pecans evenly in one layer on a non-stick baking sheet then bake for 5 minutes. Remove from oven immediately and loosen from cookie sheet with spatula and separate pecans as best you can without breaking them. Allow to cool, then enjoy!
